Tomato Kibbeh Recipe - Vegetarian Kibbeh

Ingredients

  • 1 Cup White fine Bulgur (Cracked Wheat)
  • 3 Large Tomatoes chopped
  • 1 Tbsp Sun Dried tomatoes in oil Chopped fine
  • 1 Tbsp Tomato Paste
  • 1 Large Onion
  • 3 Springs Green Onion chopped
  • 1/2 Cup Parsley Chopped
  • 1 Tsp Coriander
  • 1 Tbsp Hot Red Pepper Paste (Sahtta)
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • Olive Oil for topping

Instructions

  • Saute the chopped onion in 1/4 cup vegetable oil till they turn golden. 
  • Add the chopped tomatoes and let it simmer for 30 minutes
  • Add the spices, salt and pepper and hot tomato paste (شطة)
  • At this point your mix should be creamy but runny, if the mixture is too thick add a little water. 
  • Add the Bulgur to the sauce, cover it and let it sit for about 30 minutes for the all the mixture to get thick.
  • Transfer the contents of the pan into a food processor, add the Parsley and Sun Dried Tomatoes, run the processor intermittently for few seconds at a time. Keep checking the mix till it becomes pasty and thick enough to hold it's shape on a plate.
  • Leave some Parsley for garnish, form it to your desired shape on the plate.
  • Finally drizzle olive oil on the top, garnish with Parsley and enjoy this Mediterranean healthy Treasure

Although Kibbeh is traditionally a meat dish. The diet around the Mediterranean and  specifically Lebanese food has lots of vegetarian variety. Tomato Kibbeh sometimes called vegetarian Kibbeh is one of these dishes.  I don’t know the origin of this dish but I have a feeling Tomato Kibbe is recipe most likely the product of a need to cut meat during Lent. The availability of Bulgur and abundance of herbs and natural resources made it easy transition from meat to vegetarian kibbeh.
